Supreme Chicken Salad image

8 cups packed torn romaine lettuce
2 cups chopped cooked chicken
2 large mangoes, seed removed, peeled and cut up (2 cups)
1 cup fresh raspberries (6 oz)
1/2 cup crumbled goat cheese (2 oz)
1/4 cup roasted salted sunflower nuts
1/2 cup raspberry vinaigrette dressing

Steps:

  • Place 2 cups lettuce on each of 4 serving plates. Evenly arrange chicken, mangoes, raspberries, cheese and sunflower nuts on lettuce. Drizzle with dressing. Serve immediately.
