Sunshine Crepes image

Number Of Ingredients 10

1/3 cup margarine
1/2 cup orange marmalade
2 tablespoons sugar
1 tablespoon cornstarch
1 tablespoon lemon juice fresh
1 teaspoon lemon peel finely grated
3 bananas sliced
1 cup sour cream
16 to 20 crepes
Ground nutmeg to taste

Steps:

  • Heat margarine and marmalade, stirring constantly, until marmalade melts. Mix sugar and cornstarch slowly stir into marmalade mixture. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat stir in lemon juice and rind. Fold in bananas. Fill center of crepes with sour cream roll and top with marmalade mixture. Sprinkle lightly with nutmeg.
