Sunshine Carrots image

A delicious and colorful side dish. Carrots and parsley are in the same plant family. If you leave parsley to go wild, it will form a root resembling a carrot. Carrots are low in calories, fats and salt. They are high in fiber and a good source of vitamin A.

Number Of Ingredients 7

5 medium carrots
1 tablespoon(s) sugar
1 teaspoon(s) cornstarch
1/4 teaspoon(s) ground ginger
1/4 teaspoon(s) salt
1/4 cup(s) orange juice
2 tablespoon(s) butter ( or margarine )

Steps:

  • Cut carrots on the bias in 1 inch chunks. Cook, covered, in boiling water till just tender, about 20 minutes; drain.
  • In saucepan, mix sugar cornstarch, ginger, and salt. Add juice; cook and stir till thick and bubbly. Boil 1 minute. Stir in butter, toss with carrots.
