Steps:
- To roast garlic, preheat oven to 325 F. cut off the top of a whole garlic head to expose cloves. Place the head, cut side up in an oven proof dish or pan. Drizzle with 2 tsp of ilive oil over the top, voer pan with foil and bake for 45 minutes, or garlic is soft when pierced with a knife. Allow to cool, then squeeze garlic from root end of garlic to pop out cloves. Combine ingredients, mixing well with a fork. Garnish with shaved parmesan.
