Steps:
- Preheat the oven to 450 degrees Fahrenheit. Arrange 1/2 of the dill in a single layer in the center of a heavy baking sheet. Arrange the sliced red onion on top of the dill. Place the salmon, skin side down, on top of the red onion. Sprinkle with salt and pepper. Cover the salmon with the remaining dill. Arrange the lemon slices over the dill. Drizzle on the olive oil. Sprinkle the lemon slices with salt. (The above can be prepared up to 8 hours ahead, if that timing is more convenient. If you have prepared the above ahead and refrigerated it, then let the salmon cook just a little longer.) To cook: Roast 20 to 25 minutes, until just cooked through. Let the salmon sit 5 to 10 minutes before cutting and serving (it cooks a little more, from the residual heat, while out of the oven). Remove the dill that's on top of the salmon, as it's probably been burned. The dill underneath will still be edible, though. Serve the salmon along with the roasted onion and the lemon slices that it was baked with.
