1 teaspoon olive oil
3 cups chopped broccoli
2 zucchini, peeled and sliced
2 nectarines, pitted and sliced
1 tomato, diced

Steps:

  • In a large non-stick skillet, heat oil; stir-fry broccoli and zucchini for 5 minutes or until vegetables are soft. Add nectarines and tomato; cover and cook 2 to 3 minutes. Remove from heat; add salt and pepper to taste. Serve warm.
