Summer Squash image

I was at my sons home in Georgia.When I got this idea for everyone to make a dish they liked and bring it to my sons house that evening for dinner. I volunteered to make my Yellow Summer Squash for the dinner that night. My son said one of his wife's friends won't eat Squash. I told him she will if she takes one taste of mine :) Well latter that day I was told they couldn't keep her out of the Squash Pot!LOL..I asked her why did she like my Squash & not anyone else's? She said no one made it taste this good!She loved it and has eaten it and used my recipe ever since!

3 pound(s) yellow summer squash
1 large sweet onion
1& 1/2 tablespoon(s) lawry's garlic salt
3/4 stick(s) fresh butter
1/8 cup(s) canola oil
1/2 teaspoon(s) fresh black pepper
YELLOW SUMMER SQUASH WITH SWEET ONIONS

Steps:

  • Wash and slice your Yellow Squash into 1/2" pieces put it in a glass covered dish that is Microwave safe. Peel and chop Sweet Onion into large pieces. Add onion to the Squash.
  • Melt the butter in a in a large container such as a measuring cup. (will be easier to pour)add canola oil, garlic salt,and pepper to the melted butter.Mix well and pour over the Squash and Onions.Toss the vegetables so that they are coated with the butter mixture. Add 1/4 cup of water to bottom of the dish but do not pour it over the Vegetables.
  • Cover the glass dish and microwave for 15 Min's. Or until veggies are tender. This recipe works well with Asparagus too!I hope you like it. Sharon
