SUGAR SPICED PORKCHOPS IN PUMPKIN CHIPOTLE SAUCE image

Number Of Ingredients 16

Pumpkin Chipotle Sauce
1 Cup Canned Solid-Pack Pumpkin
1 Chipotle Pepper, snipped into tiny pieces
1 8-oz. Jar Salsa
1/4 Cup Grated Parmesan Cheese
1/4 Teaspoon Ground Nutmeg
Pork Chops
2 Tablespoons Brown Sugar
4 Boneless Pork Chops
1 Teaspoon Ground Cumin
Olive Oil
1 Teaspoon Chili Powder
2 Roma Tomatoes, seeded and diced
1/2 Teaspoon Salt
4 Teaspoons Cilantro, chopped
1/4 Teaspoon Black Pepper

Steps:

  • Pumpkin Chipotle Sauce: In a medium-size pan, combine pumpkin, chipotle, salsa, Parmesan and nutmeg over medium heat. Cook until mixture almost boils, stirring occasionally. Pork Chops: In a small bowl, combine brown sugar, cumin, chili powder, salt and pepper. Dredge pork chops in sugar/spice mixture. Heat oil in a non-stick skillet over medium heat. Add chops and cook 8 to 10 minutes, or until done, turning occasionally. To serve, spoon a generous 1/3 cup of the pumpkin sauce over the bottom of each of 4 plates, placing pork chops on top of pumpkin mixture. Sprinkle with tomatoes and cilantro.
