i never liked avacado's til i learned i wasn't lettin them get ripe.. i lov them in this recipe i came up with a few yrs ago..this goes on my x-mas dinner table every yr now....hope ya like it too!!!

Number Of Ingredients 8

6-8 medium roma tomatoes
3-4 medium very ripe avacado's
1 large lemon,zest and juice
6 slice thick cut hickory bacon
1 small white onion,chopped fine
1/2 c salted peanuts,chopped course,divided
2 Tbsp sour cream
1 pkg [8 oz] softened cream cheese

Steps:

  • 1. cut top off each tomato carfully remove "meat" from inside leaving a hollowed out tomato shell[save "meat" and use somewhere else] now salt each tomato and sit upside down on papper towl while u make the rest
  • 2. cut bacon into small pieces and fry over med heat til crisp add chopped onion and cut thil it limp sit aside to cool
  • 3. now juice and zest lemon put in med bowl peal and core avacado...mash into lemon jiuce now add bacon/onion to avacado mix well add cream cheese and sour cream add most of the peanuts stir
  • 4. fill each tomato with filling... put in fridge for several hrs jus before seving sprinkle last of peanuts on top
