STUFFED PEPPER SOUP II image

2-1/2 lbs Ground Beef
3/4 Cup Chopped Onions
2 Chopped Green Peppers
2 Minced Garlic Cloves
2 Teaspoons Salt
2 Teaspoons Black Pepper
1 Cup Uncooked Instant Rice
1 28 0z.can diced,crushed Unpeeled Tomatoes
1 Can Campbell's Tomato Soup
3 Cans 14 0z Beef Broth
1 Pinch Baking Soda
grated Parmesan Cheese

Steps:

  • Brown ground beef in stock pot; add onion, pepper, garlic, salt and pepper. Ground meat should be browned, onion and lpeppers should be slightly soft. Add instant rice, tomatoes and tomato soup. Mix well. Add beef broth and baking soda. Simmer for 45 minutes to 1 hour. Top with grated parmesan cheese and serve with crusty bread. Or put in crockpot for 4 to 5 hours.
