It has all the flavors of stuffed bell pepper - but without all the work. Preparing soup is so much easier than stuffing a pepper. The robust flavor of the bell pepper is present but not overbearing. A little cheese on top is the perfect final touch.

Steps:
- In large pot brown ground beef and drain off fat.
- Add onions and peppers. Cook until the onions are translucent but not letting them brown.
- Add tomatoes (undrained), tomato sauce, broth, thyme, and sage. Stir well.
- Cover and let simmer for 30-40 minutes until peppers are tender.
- Add two cups cooked rice stir until heated.
- I like grated cheddar or Munster cheese on top of mine.
