Stuffed Olives image

Wow, beautiful Spanish olives, you can stuff them with so many tasty things. They can be stuffed with whole garlic, feta or manchego cheese, oranges, almonds, pine nuts, lunch meats, red pepper paste or tomato paste, etc.; you can enjoy them deep or pan fried, marinated or raw. Yours to enjoy!

24 large, pitted, green olives
24 marcona almonds
300 g feta cheese, crumbled
4 clove garlic, minced
1 small sweet onion, finely chopped
1 1/2 Tbsp extra virgin olive oil
1/4 tsp ground pepper

Steps:

  • 1. Drain the olives on paper towel and set aside until needed.
  • 2. Crumble the feta cheese into a small bowl, add the onions, garlic, black pepper and olive oil, mix until a paste forms.
  • 3. Fill the olive with the paste leaving enough room for 1 almond.
  • 4. Put the uncovered olives on a plate and leave at room temperature for 12 hours to allow the flavors to blend and the filling to set. Enjoy!
