Stuffed Kabocha Squash image

Number Of Ingredients 6

1 Kabocha squash
1 cup Farro or other grain or brown rice
1/2 cup cranberries
1/2 cup mizuna or other greens, chopped
2 ounces Goat cheese
1 cup Kale, chopped

Steps:

  • Bake squash until tender, then puree. Cook greens and then add with cranberries to squash. Add goat cheese, then bake in 375 oven for 20 min.
