Stuffed Banana Peppers image

Similar to jalapeno poppers and another use for the excess garden peppers...

Number Of Ingredients 11

6 - small banana peppers
- olive oil
4 ounce(s) light cream cheese
1/4 teaspoon(s) crushed garlic
1/8 teaspoon(s) black pepper
- salt to taste
1 teaspoon(s) sriracha sauce
2 tablespoon(s) chopped chives
2 - serrano peppers, finely sliced
1/4 cup(s) chopped walnuts
1/4 cup(s) shredded cheese

Steps:

  • Preheat toaster oven to 350°. Cut peppers length-wise and remove seeds, trying to retain a short stem. Toss with a little olive oil and place open side up on a sprayed pan.
  • Roast in toaster oven for about 10 minutes. Remove from oven, pat inside of peppers dry, and cool.
  • In the meantime, mix the remainder of the ingredients together in the order listed. Use a fork or mixer to mix.
  • Raise heat in toaster oven to 375°. Fill peppers with cheese mix. Bake for about 8 minutes, watching for cheese to start to brown.
  • Note: If using a regular oven, bake times will probably be longer.
