Steps:
- 1. Filling; Chop the strawberries into small pieces. Save 8 large and 1 small for the top of the pie. Place strawberries into a pan with about 1/4 cup on water on medium heat. Add 2/3 cup of sugar. Add 2 tablespoons of corn starch. Add 1 teaspoon of vanilla. Let mixture sit on heat until thicken. STIR FREQUENTLY. Remove mixture from heat at allow to cool.
- 2. Crust; Open the pre made crust and set aside. Open cream cheese, and place about 3/4 of the block into a microwave safe bowl. Microwave cream cheese for about 30 seconds. Spoon cream cheese onto gram cracker crust evenly up to the top of the crust. APPLY CAREFULLY! *Gram cracker crusts tend to be fragile* Set aside and allow to set.
- 3. Spoon the filling into the prepared crust. Place pie in refrigerator for an hour to set. Slice remaining strawberries lengthwise. Remove pie from refrigerator. Place sliced strawberries on the pie in a circular pattern going in towards the center. Place the small strawberry in the center of the pie. *At this point you may spoon thinned flavored jam onto your pie Chill pie for another hour, and then enjoy.
