STRAWBERRY PECAN BREAD image

My cousin gave me this recipe about 30 years ago and it is one of my favorite quick breads. It only takes a few minutes to whip up and pop into the oven. Photo: Ziplist.com

1/2 c butter, softened
3/4 c sugar
1/2 tsp vanilla extract
1/8 tsp lemon extract
2 eggs
1/2 tsp salt
1/2 tsp cream of tartar
1/4 tsp baking soda
1 1/2 c all purpose flour
1/2 c strawberry jam
1/4 c sour cream
1/2 c chopped pecans

Steps:

  • 1. In a medium sized bowl, combine the butter and the sugar, vanilla, and lemon extract until smooth. Add the eggs, one at a time, and beat each one well.
  • 2. Combine flour, salt, cream of tartar and soda. Combine sour cream and jam. Add the jam mixture, alternating with the dry ingredients to the cream mixture. Beat until thoroughly combined. Stir in the pecans.
  • 3. Turn mixture into a lightly greased and floured loaf pan. Bake in a preheated 350-degree oven for 55 minutes.
  • 4. Serve warm with butter or cream cheese spread.
