Strawberry Nut Cake image

This recipe belongs to my son's mother-in-law, Constance. It is so good and refreshing plus a beautiful cake. I have made it myself a few times and find it to be very easy to make. Peggi Tebben has provided us with a pic since she made it a couple of days ago. She did a great job, too.

Number Of Ingredients 15

1 box duncan hines white cake mix
1 small box strawberry jello (dry)
1 small box vanilla instant pudding mix
1/2 c canola or vegetable oil
1 stick butter, softened
1/2 c milk (i use 1%)
4 medium eggs
1 c fresh (or frozen) strawberries, chopped
1 c chopped pecans
ICING:
16 oz powdered sugar
1 stick butter, softened
1/2 c fresh (or frozen) strawberries, chopped
1/2 c coconut
1/2 c chopped pecans

Steps:

  • 1. CAKE: Mix all ingredients and bake in three 9" floured and greased cake pans at 350 for 25 - 30 minutes. Cool in cake pans for 10 minutes, remove and cool completely before frosting.
  • 2. ICING: Mix all ingredients together and spread between, on sides and top of cooled cake layers.
  • 3. Tip: Our fellow member, Rose Rauhauser, made the cake and froze it and then iced it once the cake had thawed. Thanks, Rose, for sharing this tip.
