STRAWBERRY NUT BREAD image

3 CUPS FLOUR
1 TSP SALT
2 CUPS SUGAR
1 TSP BAKING SODA
3 TSP CINNAMON
1 ¼ CUPS CHOPPED PECANS
4 EGGS, BEATEN
1 ¼ CUPS VEGETABLE OIL
2 PACKAGES (10 OUNCE) FROZEN SWEETENED STRAWBERRIES THAWED AND UNDRAINED

Steps:

  • PREHEAT OVEN TO 350 DEGREES. GREASE AND FLOUR TWO 9X5 LOAF PANS IN A LARGE BOWL COMBINE FLOUR, SALT, SUGAR, BAKING SODA, CINNAMON, AND PECANS. MAKE A WELL IN THE CENTER; ADD BEATEN EGGS, VEGETABLE OIL, AND STRAWBERRIES WITH JUICE. MIX GENTLY UNTIL CONTENTS ARE JUST INCORPORATED. POUR BATTER EVENLY INTO LOAF PANS; BAKE FOR ONE HOUR OR UNTIL BROWNED AND WOODEN PICK INSERTED IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND COOL 10 MINUTES BEFORE REMOVING FROM PANS. STORE TIGHTLY WRAPPED IN THE REFRIGERATOR FOR SEVERAL DAYS, OR IN THE FREEZER FOR A FEW MONTHS
