BASIC NEW YORK-STYLE PIZZA DOUGH image

Number Of Ingredients 6

22.5 oz (~4.5 cups) bread flour
0.5 oz (1.5 Tbls.) sugar
0.35 oz ( about 1 Tbls) kosher salt
0.35 oz ( about 2 tsp) instant yeast (regular yeast works fine)
1.125 oz extra virgin olive oil
15 oz lukewarm water

Steps:

  • 1. Combine flour, sugar, salt, and yeast in bowl of food processor. Pulse 3-4 times until mixed. Add olive oil and water. Run food processor until mixture forms ball that rides around the bowl above the blade, about 15 sec. Continue processing 15 secs longer. 2. Transfer dough a lightly floured surface and knead once or twice by hand until smooth ball in formed. Divide the dough into three even parts and place each in a qt-sized ziplock bag. Place in refrigerator and allow to rise at least one day, and up to 5. Remove from refrigerator, shape into balls and allow to rest at room temperature for at least 2 hours before baking.
