Strawberry Cream Cheese Bread image

I live by 2 strawberry farms and when it is strawberry season this is requested by my family & friends.

FILLING:
1/4 c sugar
1 egg
1 8oz pkg cream cheese or low fat cream cheese
BREAD MIXTURE:
1 1/2 c flour
1 c sugar
2 eggs - well beaten
1 tsp cinnamon
1/2 tsp salt
2/3 c oil
1 c fresh or frozen strawberries (thawed & drained)
1/2 c chopped pecans
GARNISH:
2 Tbsp chopped pecans

Steps:

  • 1. Grease and flour a bigger size loaf pan (9"X5").
  • 2. Mix the 3 filling ingredients with a mixer and set aside.
  • 3. Hand mix (IMPORTANT to Hand Mix) the ingredients for the bread till mixture is moist, be careful not to over mix. Put 1/2 of bread mixture into prepared pan & smooth to edges of pan. Next cover with the filling & smooth to edges of pan. Lastly top with the remaining bread mixture spreading it evenly and topping with the garnish & press the pecans into bread - so they bake into bread.
  • 4. Bake till toothpick inserted into the middle comes out clean & mixture is solid when you lift the pan and shake it, I usually check first at 1 hr. Cool for at least 15 minutes on a cooling rack and then remove from pan. Cool completely before slicing with a serrated knife. Store any leftovers in the refrigerator.
