STRAWBERRY, CHICKEN & LETTUCE SALAD image

This is another of my favorite salads. It has a delicious combination of flavors and textures, and is light, yet filling.

Number Of Ingredients 13

FOR THE DRESSING (ENOUGH FOR 2:)
2 medium fresh strawberries, capped
1 tablespoon(s) balsamic vinegar
3 tablespoon(s) salad oil
2 teaspoon(s) mayonnaise
1 teaspoon(s) granulated sugar
1 pinch(es) salt
FOR EACH SALAD:
2 to 3 cup(s) torn romaine and/or butter lettuce
1/3 cup(s) shredded/chopped cooked chicken (roasted or grilled is best)
3 to 4 large fresh strawberries, sliced
1 teaspoon(s) sunflower kernels (shelled seeds)
1 tablespoon(s) bleu or feta cheese crumbles

Steps:

  • Cut 2 strawberries into pieces and place in a small bowl or cup; use a fork to mash to a pulp.
  • Into a small jar, add balsamic vinegar, oil, mayonnaise, sugar, pinch of salt and mashed strawberries; screw lid onto jar; shake vigorously for several seconds; refrigerate until needed (up to 3 days.) Shake well before pouring.
  • Into each salad bowl, layer lettuce, chicken and sliced strawberries.
  • Sprinkle with sunflower kernels; sprinkle with cheese.
  • Shake salad dressing very well; pour desired amount over salad (up to 1/2 of the dressing.)
  • Serve immediately. Cover and refrigerate leftovers.
