Strawberry Angel Pie image

Number Of Ingredients 8

3/4 cup plus 3 tablespoons sugar, divided
4 tablespoons cornstarch
1 1/2 cups boiling water
3 egg whites, beaten well
1 teaspoon vanilla extract
1 (10-ounce) package frozen strawberries
10 individual tart shells or meringue shells, baked
1 cup whipping cream

Steps:

  • Combine 3/4 cup sugar and cornstarch. Bring water to a boil; stir sugar mixture into boiling water and cook, stirring constantly, until clear. Pour slowly into egg whites beaten with remaining 3 tablespoons sugar. Add vanilla. Fold in 2 tablespoons strawberries; pour mixture into baked tart shells or meringue shells. Cool. Serve with whipped cream and remaining strawberries. If fresh strawberries are in season, garnish each serving with one or two.
