We do have Indianized chicken chow mein at least once a week. Today I prepared stir fried chicken chow mein. Initially I thought of preparing chilli chicken and fried noodles but then ended up in easier stir fried chicken chow mein.(I will post chilli chicken next week when I prepare that).

100 g chow mein noodles
1 cup c chicken pieces
1/2 c bell pepper, beans, carrots chopped
1/2 c onion chopped
2 clove garlic
1 egg
2 Tbsp corn flour
1 tsp soy sauce, dark
3 Tbsp oil
salt to taste
1/4 tsp ajinomoto, monosodium glutamate (msg)
1 tsp white vinegar

Steps:

  • 1. cook chow mein in water till 'al dente' with little oil to avoid clump. Strain and rinse in cold water.
  • 2. Mix together, egg, little salt, crushed garlic (1 clove) and corn flour to make a smooth batter. Dip chicken pieces in batter and then fry those in low heat til done. For scripy chicken you can coat the chicken pieces with normal flour or corn flour before frying. Take the fried chicken out in a separate plate.
  • 3. In the skillet now add little chopped onion and beans and cook till beans are done. Add the remainong vegetables and stir fry them in medium and low heat adjusting the heat. The vegetables should be little burnt. Add salt, ajinimoto and soy sauce. In another minute add the chow mein, vinegar and the fried chicken pieces. Mix well.
  • 4. Serve with hot and sweet tomato ketchup, black pepper and chilli flakes if you like it spicy :).
