STICKY GINGERBREAD image

Number Of Ingredients 10

2 cups all purpose flour
1 tsp ground cinnamon
1/2 tsp ground cloves
2 tsp ground ginger
1 stick (1/2 cup) unsalted butter
1/2 cup sugar
1 cup dark ( not unsulfered) molasses
2 tsp baking soda
2 eggs, lightly beaten
powdered sugar for dusting (optional)

Steps:

  • Preheat oven to 350. Grease & lightly flour 9x13 cake pan or two 8 inch square pans. Sift the flour and spices together in a mixing bowl In another large bowl, cream butter and sugar by hand or with mixer till smooth. Add molasses and continue beating until well blended. Mix the baking soda with 1/2 cup boiling water and pour into butter-sugar mixture, beating well to combine. Mix in the flour mixture. Then add the eggs and beat until smooth. Pour into prepared pan and smooth top. Bake in middle of oven until tester inserted in the center comes out clean, about 25 minutes. Cool in pan on a rack. Cut into 1 1/2 inch squares & dust with powdered sugar if desired. Cake keeps at room temp for 1 to 2 days.
