Steamed Mussels with Celery & White Wine image

Number Of Ingredients 8

2 bag Mussels
4 stalk Celery
1.5 tablespoons Olive Oil
1.5 cups Dry White Wine
1/4 cup Parsley
1 cup Celery Leaves
4 Dinner Rolls
1 tablespoon Garlic, minced

Steps:

  • Rinse the mussels under cold water, removing and discarding any cracked ones or ones that will not close when gently squeezed. Thinly slice the celery
  • In a large Dutch oven, heat the oil on medium high. Add celery and cook 3 minutes. Season with salt and pepper. Add the garlic and cook 30 seconds, stirring often. Increase heat to high and add the white wine. Cook 2-4 minutes, until wine reduces by about half. Add the mussels and cover. Cook 5 minutes, until mussels have opened, shaking the pan occasionally.
