STATE FAIR SPIEDIE image

This recipe for Spiedie (pronounced "speedy") is from an article in the March 1994 "Men's Journal" by Glen Wagoner. Best cooked over charcoal. Do not put veggies on the skewers...it ruins the meaty goodness. Pork shoulder and lamb are traditional, but beef and chicken work well too. Avoid extra lean cuts.

Number Of Ingredients 18

Marinade
1/2 c olive oil
1/2 c red wine vinegar
1/2 c medium dry sherry
juice of 2 lemons
3 tsp ketchup
1 medium onion-chopped
2 tbsp parsley-chopped
1 tbsp fresh mint-chopped
1 tsp rosemary
1 tsp white pepper
1 tsp paprika
1/2 tsp sage
1/2 tsp chili powder
1 tbsp salt
coarsely-ground black pepper to taste
3 lbs meat, cut into 1 inch cubes. (Pork Shoulder and Lamb are traditional, but beef and chicken work well, too!)
Italian hoagie rolls or pita bread

Steps:

  • Preparation 1. Cut meat into 1 cubes. place into large bowl. 2. Mix all remaining ingredients, and pour marinade over meat. Mix well to coat. 3. Marinate minimum 8 hours, overnight is best, stirring occasionally to ensure even coating. 4. Place meat on skewers, (resist the urge to put veggies on) 5. Cook on a grill or under the oven's broiler, no more than 5 inches away from heat source, for about 5 minutes. Turn a few times, brush with marinade while cooking. 6. When meat is done, slide off skewer onto italian roll or pita.
