St. Paul's Rice image

A recipe from a friend of a friend. Who know's why they call it that? Sounds good though...

Number Of Ingredients 9

1 pound(s) sweet italian sausage, no casings
2 large onions, sliced
2 small green peppers, chopped
3 ribs - celery, sliced
2 cup(s) frozen peas, thawed
4 cup(s) water
2 cup(s) instant rice
1 package(s) dehydrated chicken noodle soup
- scallions, sliced

Steps:

  • In a large nonstick skillet, brown sausage over medium high heat. Add onions, celery & peas to skillet. Over medium heat, cook, stirring occasionally, until vegetables are tender & sausage is cooked through, about 15 - 20 minutes.
  • Meanwhile, in medium pot, bring water, rice & dehydrated soup to boil; reduce heat to medium. Simmer until rice & noodles are tender, about 7 minutes, adding additional water if needed.
  • Combine rice mixture & sausage mixture & serve topped with scallions.
