Squash,Carrot,Ginger Soup image

Number Of Ingredients 10

3 tablespoons olive oil, extra virgin
1 onion, large, diced
3 pounds Squash, butternut, peeled, seeded, chopped
2 carrots, diced
1 piece ginger, 2 1/2 inches, peeled and minced
6 cups chicken broth
3 tablespoons brown sugar
1/2 teaspoon nutmeg
1 1/2 teaspoons salt
3/4 teaspoon cayenne pepper

Steps:

  • Saute all vegetables in oil in large soup kettle
  • Add broth, sugar, nutmeg, salt & pepper, Simmer 2 hours
