Split Pea with Ham(off the bone!!) image

This is the best way I've ever had split pea soup! The ham bone makes a world of difference when it's made this way and I think you'll agree!!

Number Of Ingredients 11

1 pound(s) dry green split peas
4 quart(s) chicken broth, low salt
4 large carrots,diced
2 stalk(s) celery,diced
1 large shallots,diced
3 clove(s) garlic,minced
1 medium onion,diced
4 sprig(s) bay leaves, dried
1 teaspoon(s) salt and pepper
1 large ham bone with extra ham diced for the soup,about one pound
` small roux for thickening

Steps:

  • Begin by sauteing the onion,shallot and garlic in the oil.Then add the carrots and celery,diced ham,ham bone,broth and spices.
  • Cook on high for one hour,remove the bone for the carnivore in the house,:)and thicken the soup slightly with the roux. Remove the bay leaves.
  • Serve with sliced crusty bread or a twist! Ritz cracker with a smear of cream cheese! Don't knock it until you try it,it's good!!! Enjoy!! :)
