SPINACH QUICHE, CRUSTLESS image

1/2 cup chopped onion
I box frozen spinach, thawed and squeezed of most liquid
1 cup gouda, grated
1/4 cup grated parmesan
4 eggs, lightly beaten
1 1/2 cups 2% milk
1/2 cup half and half
1/4 cup cream
dash cayenne
salt to taste

Steps:

  • Saute onion, and add spinach. (Chop spinach if whole leaf was used). Thin with the cream. Add cayenne and salt. Mix half and half and milk add beaten eggs. Put cheeses in bottom of pie pan, spread spinach mixture on top, pour milk/egg mixture on top. Bake 15 minutes at 400 degrees, reduce temp to 350 and bake for 30 more minutes, or until done.
