Spinach Cream Cheese Casserole image

A friend of my Mother's gave me this recipe last year. She said Mom made it for potlucks. Back then I hated spinach. Now I like it.... Thanks, Sharon!

3 oz cream cheese, room temperature
10 oz frozen chopped spinach, thawed and drained well
1 can(s) condensed cream of mushroom soup
1 can(s) french fried onions
1/2 tsp each salt and freshly ground black pepper, or to taste
1/2 c butter
saltine cracker crumbs (1 sleeve, crushed)

Steps:

  • 1. Mix cream cheese into spinach until smooth. Add soup, blend until well mixed, then fold in French fried onions, salt and pepper. Put in buttered baking dish. Melt butter and stir in enough crackers crumbs to absorb butter. Spread over casserole. Bake at 350 degrees until bubbly and topping is golden.
  • 2. The key to making this dish good is to drain spinach VERY WELL.
