SPINACH AND POTATO AU GRATIN image

2 tbsps butter
2 tbsps four
1 1/2 cups milk
1 1/2 cups shredded cheddar
8 cooked strips bacon
1 cup chopped onions
16 oz spinach
8 potatoes sliced 1/4 inch thick
1 tsp salt
1 tsp pepper

Steps:

  • 1. Melt butter in saucepan. Stir in flour until a paste forms. Slowly whisk in milk; bring to a simmer. Add 1 1/4 cups cheese and stir until melted. 2. Brown onions. Saute spinach for 30 seconds. 3. Layer half of potatoes in 9 x 13 inch pan. Season with half of the salt and pepper. Add half of the spinach and onions and bacon. Repeat layering. Cover with cheese sauce. 4. Bake for 40-50 minutes at 400 until browned.
