~ Spicy Tamale Casserole ~ image

A recipe given to me years ago, that I've doctored up to suit my family. Make as spicy as you prefer. Ours is very spicy as the jalapeno's I use are quite hot. This casserole is pretty simple and if you have a large enough, oven proof skillet, you can bake it in that, to save extra dirtied dishes. Delicious! Enjoy!

1 lb ground beef
1/2 - 3/4 pkg taco seasoning or to taste
1/2 tsp each - chili powder & cumin
1 chopped, onion
2 - 3 jalapeno's , chopped - i used 2 jumbo jalapenos and they're quite hot - seeds also - add to your liking
3 clove garlic minced
1/2 c beef broth
2 c drained, canned corn
16 oz diced tomatoes and juice
1 small can sliced black olives, drained
2 c water
1 c yellow corn meal
3/4 tsp salt
2 1/2 c fresh shredded, cheddar cheese
dried parsley

Steps:

  • 1. Preheat oven to 350 degree F. In a large skillet over medium heat, add a couple tablespoons oil. Saute onions, garlic and peppers until tender.
  • 2. Now, crumble the ground beef into the skillet and cook until no longer pink. Stirring occasionally. Drain any grease and return to pan.
  • 3. Add the seasonings, tomatoes, broth, corn, olives and simmer for 10 minutes.
  • 4. While meat mixture simmers, bring 2 cups water to a boil, add salt and slowly add the corn meal, whisking quickly as you add. Once thoroughly combined...stir this mixture into eat mixture.
  • 5. Spray a 9 x 13 baking dish with non stick cooking spray. Spread mixture into dish and spread cheese evenly on top.
  • 6. Bake for 30 - 35 minutes or until golden and bubbly around the edges. I leave it set up for 10 - 15 minutes before cutting. Can serve with condiments of your choosing. Sour cream, green onions is delicious with this yummy casserole.
