SPICY SHREDDED BEEF image

Number Of Ingredients 15

1 1/2 lb. flank steak
3/4 pint beef stock
Sauce:
2 T. sunflower oil
2 onions, chopped
2 garlic cloves, crushed
1/2 t. ground cumin
1/2 t. ground coriander
4 red Indian chilies, seeded & chopped
1 13 oz can chopped tomatoes
1 t. tomato purée
1/2 t. sugar
2 bay leaves
salt & pepper
2 T. chopped coriander

Steps:

  • Simmer meat 2 hours. Reserve stock. Heat oil & sweat onions until soft. Add garlic, cumin, coriander, chilies, tomatoes, tomato purée, sugar, bay leaves, salt & pepper and cook 5 minutes. Add 1/4 pint of reserved stock & simmer uncovered 35 minutes or until sauce is slightly thickened. Discard bay leaves. Shred meat & add to sauce with coriander. Heat & serve.
