- 1. In a large OVEN SAFE skillet over medium high heat, saute the italian sausage and onions.
- 2. Once cooked, add in the garlic and cook until fragrant, about 30 seconds.
- 3. Add in the broth*, rotel tomatoes (undrained), cream, salt and pepper, and uncooked pasta. Stir well. *I used organic, free range chicken broth (low sodium), and it seemed to be so much more flavorful than just normal chicken broth! Bring to a boil, then reduce heat to medium-low, and cover. Simmer, stirring occasionally, until pasta is tender, 13-15 minutes.
- 4. Remove from heat and stir in 1 cup of shredded cheese. Sprinkle remaining cup of cheese on top and broil in the oven until cheese is melted, bubbly, and starting to get spotty brown.
