Spicy Sausage, Brussels and Butternut Foil Packets Recipe image

Number Of Ingredients 7

4 links cooked Spicy Chicken Andouille Sausage, sliced 3/4 inch thick
3/4 teaspoon kosher salt
2 tablespoons olive oil
16 ounces brussel sprouts, halves
12 ounces butternut squash, peeled and diced 3/4 inch thick cubes
4 sprigs fresh thyme ( didn't have fresh, sprinkled a little dried )
fresh black pepper to taste

Steps:

  • Pre heat 425. In a large bowl combine sausage, brussel sprouts, butternut squash, thyme, olive oil, 3/4 teaspoon salt, and pepper. Make foil packets. Lay sheets of foil on counter, divide the mixture between 4 layers of foil. Bring up the sides to cover the food and fold over edges. Bake 25 minutes or until vegetables are tender.
