Spicy Salsa Muffins image

Mixed up with your favorite chunky salsa, Spicy Salsa Muffins are one quick, easy, and delicious side dish.

Number Of Ingredients 9

1 c. all-purpose flour
1 c. cornmeal
3 T. granulated sugar
3 tsp. baking powder
1/4 tsp. salt
3/4 c. chunky salsa
1/2 c. buttermilk
6 T. butter, melted
1 egg, lightly beaten

Steps:

  • Combine flour, cornmeal, sugar, baking powder, and salt in a mixing bowl. In a separate bowl, combine salsa, buttermilk, melted butter, and egg.
  • Stir wet ingredients into dry ingredients until just moistened.
  • Fill 12 greased muffin cups three-quarters full. Bake at 400 degrees for 15 - 18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes in the pan before removing. Serve warm.
  • The baked muffins take on the flavor of the salsa you use, so choose the salsa you like best. I always use Pace brand medium chunky salsa.
  • Whole milk can be substituted for the buttermilk if you're out of buttermilk.
