Steps:
- Generously coat pork roast with salt and pepper and place in bottom of slow cooker. Saute onions and garlic in oil until softened; pour over pork roast. Add chicken broth, adobo sauce (with peppers) enchilada sauce and beans. Cook on low for 8 hours. Shred pork and serve over rice. If desired, heat oil in pan and lightly fry shredded pork for tacos.
