We love homemade French fries, and we like them baked. I have been kicking up the flavor on oven fries for quite some time. I think it all started when I was a teenager. When my girlfriend and I would go to Frisch's Big Boy and get their fries. I always doused mine with black pepper, even put the pepper in my puddle of ketchup....

Steps:
- 1. Preheat oven to 400 ^F. Line a baking sheet with parchment paper.
- 2. Scrub potatoes and peel (or leave peel on if you like). Slice long, fairly thick slabs of potato. Slice slabs into thick strips, or your preferred thickness.
- 3. Place potato strips into a bowl, thoroughly rinse off potato strips. At this point potatoes can be patted dry and readied for baking, or soaked in cold water until ready to bake.
- 4. If baking right away, French fries will be crispy and chewy. If soaked and baked later they will be tender inside and crispy on the outside. Your choice.
- 5. After patting French fries dry with paper towels, place back in bowl and drizzle with oil. Toss fries making sure all are coated with the oil.
- 6. Lay French fries on parchment lined baking sheet, in rows.
- 7. For applying the seasonings, I like to put them in my hand, individually. Then pinch the spices with the other hand and sprinkle spices evenly over the fries. This way, I don't over do it with a heavy hand.
- 8. Place baking sheet with French fries into preheated oven and bake until golden brown. Abt. 45 min.
