Spicy black bean chili image

I love the smooth taste of black beans and they're so filling, they go real good w/ the spicy sausage in this chili.

Number Of Ingredients 11

2 12 oz pkgs chorizo sausage, casings removed
2 can(s) black beans rinsed and drained
1 c chopped onion
1 c chopped celery
1 c grated carrot
1-3/4 c chicken broth
1 Tbsp dried oregano
3 Tbsp lemon juice
1/2 tsp cayenne pepper
1-1/2 tsp minced garlic
sour cream, i used light

Steps:

  • 1. In lg skillet, over med-high heat, cook sausages, crumbling as you cook until browned. In bowl, mash 1 can of black beans w/a fork.
  • 2. In a 4-quart slow-cooker, combine sausage, mashed beans, canned beans, onion, celery, carrot, broth, oregano, lemon juice, pepper and garlic.
  • 3. Cover, cook on low for 4 hrs. Serve w/ sour cream. This is great w/ corn bread!
