Spicy African Chicken Stew image

Number Of Ingredients 11

1 tablespoon olive oil
1 pound boneless skinless chicken breasts or thighs
1 1/2 cups chopped onions
2 cloves garlic, minced
28 ounces canned whole tomatoes, undrained, cut up
1/4 cup creamy peanut butter
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoons crushed red pepper flakes
1/2 cup chopped roasted peanuts
3 cups hot cooked rice

Steps:

  • Heat oil in a Dutch oven over medium high heat until hot. Add chicken, onions and garlic, cook aobut 5 minutes until browned and onions are tender.
  • Stir in tomatoes, peanut butter, and seasonings. Bring to a boil, reduce heat and simmer 35 minutes.
  • Serve over hot rice, sprinkle with chopped peanuts.
