Steps:
- Drain peaches, reserving juice. Simmer juice 4 or 5 minutes with sugar and spices. Taste and correct if necessary. Add peaches and bring just to a boil. Chill in syrup. Make 2 days before plan to use for best flavor. Pour off some of the syrup when ready to serve. Use a slotted spoon. Usually double the recipe.
