I took a few notes and combined a few recipes to come up with this. This cake taste more "muffin like" than "cake like" as it is not overly sweet. I make it as a cake in a 9x13 pan, but you could also do it in muffin tins or in bread pans. Goes great with vanilla ice cream, coffee, and/or tea.

Steps:
- Peel, core, and cut apples into very small cubes. Mix apples in a large bowl with lemon juice, pumpkin pie spice, and sugar. Set aside.
- Preheat oven to 350. Mix flour, almond meal, baking powder, and salt in a small bowl. Set aside
- Cream together butter, sugar, and truvia.
- Add eggs, vanilla extract, almond extract, chai tea, and whisky to butter mixture. Mixture will be lumpy.
- Add flour mixture to egg mixture 1/2 cup at a time. Mix until well blended.
- Add apples to cake mixture, fold apples in carefully until just mixed.
- Pour cake mixture into a well greased 9x13 pan (alternatively, you can use muffin tins or bread pans).
- Mix the remaining sugar, pumpkin pie spice, and cinnamon in a small bowl. Sprinkle mixture over cake.
- Bake at 350 for 1 hour to 75 minutes, or until toothpick comes out clean.
