This is a quick and simple dish that is great for a week night when time is short. It's also good as a side dish for Mexican food. My family always expects this for dinner shortly after we have ham. lol.

Steps:
- 1. In a large saucepan melt butter over medium heat. Saute green pepper until crisp tender.
- 2. Stir in ham, undrained stewed tomatoes, tomato juice, peas, and water. Bring to a boil.
- 3. Remove from heat and stir in instant rice. Cover and let stand about 5 minutes or until rice is tender.
