Spanish Rice image

My dad and I developed this recipe after eating at a friend's that wouldn't share her recipe. I think our recipe is even tastier, but you must use the Heinz ketchup for the taste to be perfect.

Number Of Ingredients 10

6 slice bacon, diced
3 Tbsp bacon drippings
1 medium onion, sliced
1/2 c bell pepper, chopped
I c uncle ben's regular rice
2 c canned chopped tomatoes
2 c water
1/4 c ketchup (use heinz ketchup only)
1 tsp kosher salt
1/4 tsp freshly ground black pepper

Steps:

  • 1. In frying pan cook bacon until crisp. Remove and drain. Reserve 3 tablespoons bacon drippings.
  • 2. Cook raw rice, onion and bell pepper in drippings until onion is tender. Add the remaining ingredients, except bacon pieces. Cover and simmer until rice is tender and has absorbed all the liquid. Fluff and add bacon.
  • 3. I sometimes add diced ham to make this a main dish casserole. I also have used rotel tomatoes to add a bit of spice to the dish.
