My late best friend's sister Anna gave me this recipe years ago. It is the easiest Spanish Rice I ever made and the tastiest!

Number Of Ingredients 5

2 c long grain rice, uncooked
1/2 c yellow onion, diced
1 can(s) chicken broth
1 can(s) tomato sauce, (8 ounce)

  • 2. When rice is golden stir in your onions until soft.
  • 3. Add chili powder and mix well.
  • 4. Add chicken broth, tomato sauce, and if needed enough water to cover the rice by about 1/4 inch over the top.
  • 5. Bring to a boil, turn burner to low and cover the pan with lid or tin foil. Let cook on low till all the liquid is absorbed about 20 minutes or so.
