Spanish Pork image

This dish is packed with flavor!! It can be made low calorie by using Margarine and artificial sweetener or hotter by adding more Ancho Chili. I cooked this in a wok! Whatever your heart desires!

Number Of Ingredients 13

2 lb boneless pork fat removed and cubed
1 Tbsp butter
1 large onion diced
1 ancho chili in adobo sauce seeded and chopped
1 c bell pepper diced
1 c celery diced
16 oz can diced fire roasted tomatoes
1 Tbsp minced garlic
1/2 tsp chili powder
3/4 c water
salt and pepper to taste
2 Tbsp sugar
cornstarch ( optional )

Steps:

  • 1. Melt butter in a large fry pan and brown the pork
  • 2. Push pork to one side, add onion and garlic Saute' until tender
  • 3. Mix onion and pork together
  • 4. Add the can of tomatoes, water, celery, bell pepper, ancho chili, salt and pepper
  • 5. Stir, cover and simmer 45 minutes or until pork is tender
  • 6. Before serving stir in 2 Tbls sugar or more to taste
  • 7. Thicken with Cornstarch to your liking
  • 8. Serve over rice
