SOUTHWESTERN TUNA CASSEROLE image

Number Of Ingredients 9

1 medium onion, chopped
1/2 cup chopped celery
1 1/2 cups corn
1 can (10.5 oz) cream of mushroom soup
1 cup salsa
1 teaspoon chili powder (optional)
1 can (6 oz) tuna packed in water, drained and flaked
2 1/2 cups rotini, penne or fusilli pasta, cooked
1 cup chedder cheese

Steps:

  • Preheat oven to 350F Coat 2 quart casserole dish with nonstick cooking spray. Cook onion and celery over medium-high heat until soft, about 3 minutes. Stir in corn and cook 2 minutes more. Stir in soup, salsa, and chili powder until well blended. Add tuna and pasta, stirring just to coat. Pour into casserole dish and sprinkle the top evenly with cheeese. Bake for 25 minutes or until bubbly.
