i lov breakfast foods but don't like gettin up in the morning to make them so i try and find stuff to prep the night before and jus bake in the morning... came up ith this....taste was right on one problem i had getting them out of the muffin tin without fallin apart i sprayed them well ad there was butter in the...

Number Of Ingredients 8

6 slices thick cut bacon
1 pkg brown and serve sausage
1/3 pkg frozen potatoes obrain
1/2 stick butter
2 large eggs,beaten
1/2 c parmesan cheese
6 large eggs
6 tsp parmesan cheese

Steps:

  • 1. preheat oven to 400 spray med size muffin tins with cooking spray set aside
  • 2. in med fry pan cook bacon til crisp set on plate with papper towel on it
  • 3. in pan bacon was cooked in put potatoes stir well in bacon grease brown them some if ya want to take off heat let cool to room temp[so when ya add the eaten eggs they don't cook then]once cool add beaten eggs and parmason cheese and room temp melted butter mix well divid potatoes into 12 muffin tin cups put in oven cook bout 10 min
  • 4. while potatoes are cookin cut sausage into several piecesonce potatoes been in oven 10 min take out and put sausage that has been divided into 12th's into each cup put back in oven bout 5 more min
  • 5. now take muffin tin from oven crack an egg into 6 of the muffin cups[use the ones with the most room] add teaspoon of cheese on top of eggs
  • 6. turn oven down to 350 bake eggs 15-20 min depends how done u like them
  • 7. served this with a fresh fruit salad made of strawberries,kiwi,and banana
