Steps:
- 1. Heat oil and saute garlic and onion until soft.
- 2. Add chipotle, and tomatoes and saute for 5 minutes over medium heat. Add cilantro, chicken stock, tomato paste, sea salt and pepper.
- 3. Bring to a boil, reduce and simmer for 10 minutes. Remove from stove.
- 4. Add fresh lime juice. Let cool and puree in blender.
- 5. Cook chicken (grill or poached) and slice. Pour puree in sauce pot, add chicken and bring to a boil.
- 6. Ladle in soup bowls and top each with crushed tortilla chips, grated cheddar cheese, and sour cream.
- 7. Garnish with sliced avocado if desired.
