Southwestern Chicken Tortilla Soup image

Number Of Ingredients 15

1 tablespoon Coconut Oil
2 cups Onion - chopped
2 teaspoons Garlic - minced or chopped
scant 1/2 teaspoon Ground Chipotle
4 cups Tomatoes - chopped (approx. 2 #)
2 tablespoons Cilantro
6 cups Chicken Stock
1/2 cup Tomato Paste
1/2 teaspoon Black Pepper
2 teaspoons Sea Salt
2 tablespoons Lime Juice
4 Chicken - boneless, skinless
3 cups Tortilla Chips
1/2 cup Grated Cheddar Cheese
1/4 cups Sour Cream

Steps:

  • 1. Heat oil and saute garlic and onion until soft.
  • 2. Add chipotle, and tomatoes and saute for 5 minutes over medium heat. Add cilantro, chicken stock, tomato paste, sea salt and pepper.
  • 3. Bring to a boil, reduce and simmer for 10 minutes. Remove from stove.
  • 4. Add fresh lime juice. Let cool and puree in blender.
  • 5. Cook chicken (grill or poached) and slice. Pour puree in sauce pot, add chicken and bring to a boil.
  • 6. Ladle in soup bowls and top each with crushed tortilla chips, grated cheddar cheese, and sour cream.
  • 7. Garnish with sliced avocado if desired.
